Below is the recipe for White Chocolate Chip Cranberry Oatmeal Cookies (aka my son’s favorite cookies). These are the cookies for which I made Sturdy Cookie Gift Box and shared how to make yesterday. If you need a tutorial for the box, click HERE! Fall is the perfect time for these cookies. Enjoy!
White Chocolate Cranberry Oatmeal Cookies
1 cup Butter (I use unsalted)
1-1/2 cups Brown Sugar, lightly packed
2 Eggs
1 tsp Vanilla
2 cups All-purpose Flour (I use 1 cup whole wheat and 1 cup white)
1 tsp Baking Powder
1/2 tsp Baking Soda
2 cups Rolled Oats (Old Fashioned Quaker Oats)
2 cups White Chocolate Chips (Ghirardelli)
1 cup Dried Cranberries (Ocean Spray)
Cream butter and sugar together. Beat in eggs 1 at a time. Add vanilla. Add remaining ingredients. Mix well. Drop by spoonfuls onto a parchment-lined baking sheet. Bake in 350 F oven for about 12 minutes. Makes approximately 4 dozen.
Tips for making uniform size cookies
* If making these cookies for a gift box, use a cookie scoop, so that the cookies will be uniform in size. I used a Solula #40 scoop for mine.
* I also freeze the scooped cookie dough balls on a small wax paper lined sheet before baking as this helps keep these cookies from spreading and keeps the centers soft. If you want a flatter cookie do NOT freeze them.
